1. In a large bowl, combine ﬁrst six ingredients.
2. In a separate bowl, beat egg whites until frothy and combine with spices. Mixture will become syrupy. Pour one package of nuts at a time into the egg white mixture until all nuts are coated.
3. Spread onto large cookie sheet. Bake at 200° for 2 1⁄2 hours, stirring every 1⁄2 hour.
