These potato and spinach croquettes are a great alternative to salmon or tuna patties. The potatoes and spinach are blended for a smooth texture and they can be fried or baked according to your preference. Enjoy!

Start Cooking

Prepare the Croquettes

  1. Combine potatoes, spinach, oil, egg yolks, and seasonings. Blend until smooth. 

  2. Shape into croquettes. Dip into egg and roll in crumbs. 

  3. Fry in oil until brown.

Note:

Frozen spinach can be used without cooking. Broccoli, zucchini, or cauliflower can be substituted for spinach.

Variation:

To bake, grease baking pan with four tablespoons of oil. Place croquettes onto pan. Bake at 400 degrees Fahrenheit for 15 minutes on each side.
