Quick and easy – perfect for breakfast, lunch or dinner!

Ingredients

Main ingredients

  • 4 eggs

  • 1/2 cup milk

  • 1 cup cheddar cheese

  • 1/2 cup ricotta cheese

  • 1/4 cup smoked Gouda cheese

  • 4 ounces frozen spinach, thawed and liquid squeezed out

  • 4 veggie hot dogs, sliced

  • salt

  • pepper

Directions

Prepare the Crustless Quiche

1.

Preheat oven to 350 degrees Fahrenheit.

Beat eggs with milk. Mix in remaining ingredients. Pour into greased Pyrex or pie plate.

3.

Bake for 30–35 minutes, until slightly brown on top.

Notes:

You can add loads of vegetables and toppings to this. I was aiming for simple so my kids would eat it. And thankfully they did!

eggs means its not vegan…

They mean to say that the sausage is vegan and not meat
