Paired with soup or salad, these cheesy balls are a great dinner for the entire family. You can leave out the spinach for any picky eaters.
Yields 16 balls
1 tablespoon Gefen Yeast
2 tablespoons sugar
1 and 1/3 cups warm water
2 tablespoons oil
4 cups Glicks High-Gluten Flour (or 2 cups high-gluten flour + 2 cups whole-wheat flour)
1 and 1/2 teaspoons Gefen Salt
1 (packed) cup frozen chopped spinach, defrosted and drained
2 cups shredded cheese
2 tablespoons butter
2 tablespoons milk
2 cubes Gefen Frozen Crushed Garlic
1/4 teaspoon Gefen Salt
1/2 teaspoon oregano
1/2 teaspoon basil
Prepare the dough: Place yeast, sugar, and water in a mixing bowl. Cover and proof 10 minutes.
Add all remaining dough ingredients. Mix until a smooth dough forms; knead well.
Let dough rise for 30 minutes.
Prepare the filling: In a separate bowl, mix spinach and cheese together.
Prepare the topping: Place butter, milk, and garlic in a small saucepan. Melt over low heat, stirring frequently. (You can also do this in a disposable pan in the oven heated to 200 degrees Fahrenheit.) Remove from heat; stir in seasonings.
Divide dough into 16 pieces. Roll each piece into a circle. Place about 3 tablespoons filling in the center; pinch dough to enclose and form a ball.
Dip each ball into the butter topping to coat. Arrange in a single layer in a 9×13-inch pan.
Let rise for 30 minutes.
Preheat oven to 400 degrees Fahrenheit.
Bake for 25 to 30 minutes, until browned.
