A cooling summer salad with the right amount of sweet.
4 cups arugula and spinach
1 cucumber, julienned into noodles until the seeds
1-2 hard peaches or nectarines, julienned
1 cup snap peas
1 bunch mint, finely diced
1/2 fennel, shaved with peeler or a julienne peeler
1/2 cup almonds
1 teaspoon Tuscanini Lemon Juice
2 tablespoons Gefen Maple Syrup, or a packet or 2 of stevia
1/4 cup Tuscanini Balsamic Vinegar
1/4 cup oil
salt
pepper
Combine salad ingredients, dressing ingredients, combine and serve!
