Diets For “Soup Week,” I created three homemade soup mixes that you can gift to someone or assemble early in the day or week for dinner; of course I had to include split pea soup. Without a doubt, it is one of those classic favorite soups that is so comforting and delicious.
1 cup Gefen Green Split Peas
1 cup Gefen Red Lentils
2 tablespoons dried onion flakes
1 tablespoon garlic powder
1 tablespoon ground cumin, such as Pereg (optional)
2 teaspoons dried basil
1/2 teaspoon celery seed
1 bay leaf
6 cups Manischewitz Vegetable Broth
kosher salt
freshly ground Gefen Black Pepper
Layer the split peas, lentils, and seasonings in a mason jar. (Use a funnel to achieve those beautiful, Instagram-worthy layers!)
To make the soup, pour the contents of the jar into a large pot.
Add the broth; bring to a boil over medium-high heat, then reduce the heat to medium, cover, and cook for about one hour, stirring a few times and adjusting the heat as needed, until the split peas are tender.
Taste and season generously with salt and pepper. Discard the bay leaf before serving.
