2 zucchini
garlic
1-2 thinly sliced peppers
onion powder
a handful of cut up cherry tomatoes (you can use regular, I just find the cherry tomatoes have more flavor in stir-fries)
chili flakes (optional)
1 small eggplant
one pkg of sandwiches steaks
some frozen broccoli florets
soy sauce
olive oil
salt
1 onion, diced
pepper
Pour a nice amount of olive oil over a pan, enough to cover the bottom.
Add in the onion. After 3-5 minutes add in cut up eggplant and zucchini.
After another 3-5 minutes, add in the rest of your veggies add seasonings and soy sauce to your liking. Let sit on medium to low heat for about ten minutes, then add in the sandwich steaks.
Cover with lid and leave on low flame till the meat is cooked (about 15 minutes). Serve alone or over any grain.
