Ingredients

Strawberry Lemonade Icebox Cake

  • 21 ounces frozen sliced strawberries

  • 3 tablespoons sugar

  • 16 ounces Gefen Whipped Topping

  • 4 ounces non-dairy cream cheese

Directions

Prepare the Strawberry Lemonade Icebox Cake

1.

In a bowl, combine the strawberries and sugar. Set aside to soften.

Meanwhile prepare the lemon mousse. Using a mixer, whip the topping on high speed until soft peaks form. Add the non-dairy cream cheese and lemon jello powder and continue to whip until fluffy. Transfer to a piping bag or gallon-sized zip-top bag and snip a corner.

3.

Line a serving dish with a base layer of graham crackers. Pipe the lemon mousse evenly over the top. Add a third of the softened strawberries on top of the lemon mousse and repeat. Add another layer of graham crackers and lemon mousse but reserve the last portion of strawberries.

4.

Freeze until firm. When ready to serve, top with the reserved strawberries.

Tips:

No room in your freezer? This comes out great refrigerated as well! The results are slightly different, but both fabulous.

Hi. How do you slice the frozen strawberries? How do you stop them from getting too smooshy when they defrost? Thanks.

I’m wondering if maybe frozen strawberries are sold sliced in addition to being sold whole. If you can only buy them whole, maybe only after defrosting them for a teeny bit, they will cut nicely & evenly without getting smooshy.

Yes, I would definitley buy them pre-sliced if you can find. If not, you would want them to be slightly defrosted that you can cut them but not too much so that they’re not too mushy.

if I was using a diff flavor jello would i still put in the cream cheese?
looks amazing!

Yes. It would not make a difference in the texture, just the flavor.
