2 and 1/4 cups flour
1 and 1/2 cups sugar
1 tablespoon plus 1 teaspoon baking powder
pinch of salt
1 stick butter/margarine
3 eggs
1 and 1/4 cups milk/ soy milk
1 tablespoon vanilla extract
1/8 cup oil
cooking spray
strawberries, cleaned
whipped cream
Preheat the oven to 350 degrees Fahrenheit.
Beat the flour, sugar, baking powder, and salt together.
In a separate bowl, beat margarine. Beat eggs, one at a time, into margarine. Add the margarine mixture to the dry ingredients.
Add milk/soy milk, vanilla, and oil. Beat batter together.
Spray a mini cupcake tray and fill with the batter.
Bake for 10 to 15 minutes.
Beat cream.
Slice strawberries thinly.
Cut mini cupcakes in half. Fill the first layer of the cupcake with cream and strawberries.
Cover with the top of cupcake and decorate with more cream and strawberries.
