Summer Pasta Salad

Ingredients

Pasta Salad

  • 1 red bell pepper, chopped

  • 1/2 cup chopped onion

  • salt, to taste

  • black pepper, to taste

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Spray a baking sheet with cooking spray.

2.

Spread cauliflower on the baking sheet in a single layer and cook for 45 minutes.

3.

Meanwhile, cook pasta according to package directions. Transfer to a large bowl and set aside.

4.

In a small bowl, mix together the mayonnaise, vinegar, and mustard. Set aside.

5.

Add cauliflower, red peppers, and onions to the pasta. Season with salt and pepper to taste.

6.

Add dressing and toss to coat everything.
