Diets When I thought of brining watermelon in a spiked lime marinade, I had no idea that it would be so out-of-this-world delicious! Once I tasted this fabulous, oh-so-easy dessert, I knew I’d never be able to go back to eating just plain watermelon again! On or off a stick, the fruit is absolutely fantastic! Don’t forget to serve it chilled.
Yields 10-12 skewers
4 cups watermelon cubes
2 cups cubed mango
2 Persian cucumbers, sliced
2 tablespoons Gefen Hot Honey
2 tablespoons Cava Tequila
1 and 1/2 teaspoons lime zest
3 tablespoons lime juice
1/4 teaspoon Haddar Kosher Salt
12–14 fresh mint leaves, chopped
Whisk all the marinade ingredients in a medium bowl until well combined.
Add the watermelon, mango, and cucumbers and toss gently to coat everything evenly.
Cover and refrigerate for 30 minutes to allow the flavors to develop.
Once chilled, thread the watermelon, mango, and cucumbers onto skewers, beginning and ending each skewer with a piece of watermelon. Keep skewers chilled until ready to serve.
