This is a great last-minute dessert that takes just a few minutes to put together. The biscuits get really moist and soft, so they stand in well for cake.
16 Kedem Vanilla Tea Biscuits (approximately)
1 cup pre-whipped whipped cream (or whip your own)
1 cup store-bought custard (I use Baker’s Choice)
1/2 cup fresh blueberries
1/2 cup diced strawberries (fresh or frozen)
Lay half the biscuits on the bottom of a loaf pan.
Mix whip and custard and gently smear on top of the biscuits. Sprinkle blueberries and strawberries on top of whip. Repeat with a second layer.
Refrigerate at least two hours so biscuits get soft. Keep refrigerated until ready to serve.
To serve, slice between the biscuits for a neat cut.
