Diets A simple yet boldly delicious salad bursting with flavor! I love making this for Shabbos. I divide the salad in two. Serving it for lunch, I take it up a notch and add some grilled chicken. And for Shalosh Seudos, I’ll add salmon or feta cheese. So good!!
2 cups Gefen Orzo, cooked according to package directions
1 (10-ounce) jar Tuscanini Sun Dried Tomatoes, drained and roughly chopped
1 can Glicks Chick Peas, drained
2 cups baby spinach, leaves roughly chopped (or 1 cup frozen spinach, thawed and squeezed dry)
1 bell pepper, diced
olive oil, for drizzling
salt
Place everything in a bowl and mix. The salad can be assembled a few hours in advance.
