Sunshine Salad


This salad is a very different kind of combination, but it really works! Keep all the components separate until it’s ready to be served.


Prepare the Sunshine Salad

1. Bake breaded cauliflower according to package directions. Keep them in the oven a bit longer so they get crispy.
2. Cut lettuce into smaller pieces.
3. In a large salad bowl, layer lettuce, cucumbers, mango, cauliflower, and cashews.
4. In a bowl, dissolve sugar in water. Add the rest of the dressing ingredients and mix to combine.
5. Pour dressing over salad.
