A special thank you to my sister who sent this recipe my way. She claimed it was a real winner dinner, and it is! The kids love it, as placing all the vegetables on top of the chicken instead of below it yields really soft results.
3 tablespoons neutral-flavored oil
1 teaspoon Pereg Paprika
1 teaspoon garlic powder
1/2 teaspoon salt, plus more to taste
1/2 teaspoon black pepper
4–6 chicken bottoms
2 zucchini, diced
2 yellow squash, diced
2 carrots, diced
1 onion, diced
3 cubes Gefen Frozen Garlic
Preheat oven to 400 degrees Fahrenheit.
In a small bowl, combine oil, paprika, garlic powder, half a teaspoon salt, and pepper to form a paste. (Add any other spices of your liking, such as oregano, basil, parsley, or rosemary. Whatever your family prefers.)
Brush chicken with the spice paste and place in a 9×13-inch baking dish.
In a bowl, toss zucchini, yellow squash, carrots, and onions with garlic. Spread over chicken and sprinkle with salt to taste.
Bake covered for two hours.
