Submitted by Ahuva Brownstein One night I needed a quick and easy supper. I looked in my fridge and saw that there was no food in there. Then I looked in my pantry and saw a bunch of canned items and inspiration struck! In under 25 minutes supper was ready. As of then this has become a staple in our house. If I have some leftover chicken from Shabbos I just throw it in and it adds flavor and uses up my leftovers.
2 onions, diced
1 can white beans, drained
1 can mushrooms, drained
1 can hearts of palm spaghetti, drained
leftover chicken, cubed (optional)
1 cup marinara sauce
1/3 cup water
3 tsp soy sauce
1 tsp smoked paprika
1/2 tsp garlic
a pinch of salt
a pinch of pepper
Heat oil in a large frying pan. Add in the diced onions and sauté on a medium low heat for 8 minutes.
Then add in the beans, mushrooms, and hearts of palm spaghetti and mix well. If you are using chicken add it in here as well. Let the mixture cook for another 10 minutes. Make sure to stir it every couple of minutes so the mixture doesn’t stick to the bottom of the pan. Then add in the marinara sauce, water, soy sauce, and spices. Mix well. Let it cook for another 5 minutes.
You can reheat this on a low heat, stirring consistently.
