When I first made this recipe I knew it was an instant winner. By the time I went to plate it there was almost nothing in the pan!
1 pound white mini potatoes
1 pound red mini potatoes
4 tablespoons oil
2 tablespoons brown sugar
1 tablespoon salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Preheat the oven to four hundred degrees. Rinse the potatoes and pat dry.
Cut each potato in four and dump in a nine x 13 pan. Add the rest of the ingredients and mix well.
Bake uncovered for an hour and a half. Mix once or twice in between.
