Sweet And Sour Chicken Meat And Potatoes

This is a delicious one pot versatile chicken, meat and potato dish. You can use it as a filling for egg rolls. You can dress it up and use it for a simcha. You though will most probably eat it straight from the pot.

Directions

1.

Brown onion in one tablespoon oil until slightly brown. Add diced potatoes, cook 10 minutes until potatoes start to get soft. Add rest of ingredients, cover and let simmer 20 minutes.  Adjust seasoning and enjoy.

2.

For egg roll: mash potatoes before adding chicken and meat. Cook the same way as before. Add to egg roll wrappers, fry and enjoy.

3.

To use for a simcha, make the same thing in a nine by 13. Fry onion, then add potatoes and ground beef. Cover with chicken and the sauce. Bake covered for 20-25 minutes.

Variations:

Instead of sweet and sour sauce, you can combine 1/2 cup ketchup, 1/2 cup brown sugar, and four tablespoons vinegar.
