I am a real fan of fresh and don’t freeze much, but desperate times call for desperate measures. I discovered that if I froze my raw roast in this marinade, the results were beyond. You will love it too, guaranteed.
Sweet-and-Sour French Roast

Make the Roast
Place all marinade ingredients in a ziplock bag. Mix together very well. Wash and dry roast and place in marinade. Allow to marinate for at least an hour, or overnight in the refrigerator.
Preheat oven to 325 degrees Fahrenheit (170 degrees Celsius). Transfer meat and sauce to a nine by 13-inch roasting pan. Sprinkle with salt and pepper. Cook uncovered for 18–22 minutes per pound. You may also freeze the meat raw in the marinade. Defrost and then bake.
