Diets The croquette is usually a patty made with meat, poultry, fish, cheese, or potatoes, mixed with a binder (classically a velouté, which is a flour-thickened sauce), coated in bread crumbs, and fried. This is not to be confused with croquet, the game famously played in Alice in Wonderland.
1 pound farmer cheese
1/2 cup sugar
grated zest and juice of 1/2 a lemon
1 large egg
1/4 cup plain bread crumbs, such as Gefen, or more as needed
Gefen Canola or other oil, for frying
4 beaten eggs
plain bread crumbs, such as Gefen mixed with ground cinnamon
Combine the cheese, sugar, lemon zest and juice, and one egg in a large mixing bowl and mix thoroughly. Add plain bread crumbs just until stiff enough to form into patties.
In a separate bowl, mix additional bread crumbs with cinnamon. In a third bowl, add beaten egg.
Heat 1/4 inch oil in a large pan. Form patties and coat first with the beaten eggs and then with the cinnamon bread crumbs. Fry on both sides until golden brown. Drain on paper towels.
