Sweet Corn Soup is a hearty soup! Easy to make!
1 med. corn on the cob
2 Tbsp. water (cooked from corn)
1 Tbsp. chopped onion
2 C chicken broth or veg. broth
1/2 Tbsp. corn flour or corn starch
Salt & pepper to taste
Boil or steam the corn. Let corn cool.
Scrape the corn kernels off from the cob.
Set aside 2T of corn kernels. Blend remaining kernels with 2T water (cooked) till smooth.
Heat oil in a pot, sauté onions. Add corn paste and stir, add chicken or veg. Broth, stir again, let soup come to a boil.
Add salt, pepper and the remaining corn kernels. Let simmer for 2-3 minutes.
Lastly, add in corn flour or starch, stir and simmer for 2-3 minutes till stiff but good to eat.
