Diets This kugel is a take on a sweet lukshen kugel. It will be enjoyed by adults and kids alike, despite having eaten 15-plus seudahs already!
1 cup apple juice
1 cup oil
2 cups Manischewitz Matzo Farfel, well crushed in a Ziploc bag
1/2 cup sugar
4 eggs, slightly beaten with a fork
1 and 1/4 cups Gefen Pineapple Tidbits
1 teaspoon Gefen Vanilla
1 teaspoon cinnamon
1 tablespoon vanilla sugar
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Place apple juice, oil, and matzah farfel in a small bowl and mix. Allow matzah farfel to soak while combining the rest of the ingredients.
In a larger bowl, combine sugar, eggs, pineapple tidbits, vanilla, and cinnamon, and add farfel mixture. Mix well.
Pour into a greased 9×13-inch pan and sprinkle with vanilla sugar. Bake for 35 minutes.
