My favorite marinade with baby chicken creates the perfect combo for an easy Yom Tov main.
Yield: 8 baby chicken
8 deboned chicken bottoms
juice of 1/2 lemon
2 tablespoons Gefen Olive Oil
2 tablespoons brown sugar
2 cubes Dorot Gardens Frozen Basil
2 cubes Gefen Frozen Parsley
2 teaspoons chicken soup mix
salt, to taste
black pepper, to taste
In a bowl, whisk marinade ingredients.
Add to chicken and marinate for 30 minutes.
Preheat oven to 400 degrees Fahrenheit.
Place chicken in pan, cover, and bake for 30 minutes.
Uncover and baste chicken with juices.
Bake uncovered for 10 minutes.

Adjust the cooking time as needed. It may need a shorter baking time.
