Diets Tacos are always fun and family-friendly, so I’ve been trying to create a dessert using tacos. As soon as these stroopwafels arrived on grocery shelves, I knew we hit the jackpot. I’ve tried dessert tacos in the past with sweetened, baked tortillas, but you just can’t compare that to these textured sweetened waffles. It’s as if they were made just for this dessert!
1 cup sugar
1/4 cup Gefen Lemon Juice
2 cups diced peaches
2 cups diced plums
1/4 teaspoon nutmeg
1/4 teaspoon pumpkin pie spice, such as Pereg
pinch of salt
4 teaspoons Gefen Cornstarch
3 tablespoons water
2 (8-count) packages stroopwafels
Combine sugar and lemon juice in a saucepan over medium heat and simmer until sugar is dissolved. Add peaches, plums, nutmeg, and pumpkin pie spice and cook for five to seven minutes, until soft, stirring every few minutes. Dissolve cornstarch and water and add to the pot. Simmer for another five minutes until thickened and set aside. This can be done in advance and kept in the refrigerator for up to a week.
Microwave stroopwafels for 10 to 15 seconds, until softened enough to be pliable. Gently bend into a taco shape. Flip over a muffin pan and stand the waffle in the crevice. Let sit to harden.
Warm fruit filling and fill waffles immediately before serving.

Where can I get these Stoop Waffles? Do they have an OU or only OUD?

There are Pizelles that are sold in many grocery stores and often Pareve.
