Diets This recipe has some unusual ingredients that give it an unusually good taste! These noodles are meant to be served warm, but the leftovers are also delicious cold.
12 ounces linguine
1 and 1/2 tablespoons Gefen Sesame Oil
2 tablespoons Gefen Sesame Oil
1/2 cup chopped scallions, plus additional 1/4 cup for garnish
1 cup finely julienned carrots
1 cup snow peas, thinly sliced
1/2 red pepper, thinly sliced
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 2 cubes Gefen Frozen Ginger
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili sauce
Cook pasta in a large pot of salted water, according to package directions. Drain and return to pot. Add one and a half tablespoons sesame oil and toss to coat. Set aside.
Meanwhile, heat remaining two tablespoons sesame oil in heavy pot over medium-high heat. Add scallions, carrots, snow peas, red pepper, broccoli, garlic and ginger. Sauté until vegetables soften, about four minutes.
Add honey, peanut butter, soy sauce, rice vinegar and chili sauce and mix well. Simmer sauce two minutes.
Pour sauce over pasta and toss well. Transfer to platter and serve warm, garnished with additional scallions.
