Twice-fried and perfectly crisp, tostones are a Puerto Rican staple. These golden bites are often served with a garlicky dipping sauce.
3 green plantains, peeled and sliced into 1-inch (2.5-centimeter) rounds
vegetable oil, for frying
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1/2 cup (110 grams) Gefen Mayonnaise
Line a plate with paper towels and heat near the stove. Pour 1/2 inch (1.3 centimeters) oil into a heavy-bottomed pot and heat over medium heat.
Fry the plantain slices for about three minutes on each side until golden. Remove from the oil and flatten each piece using a tostonera (plantain press) or the back of a spoon. Return the flattened plantains to the oil and fry again until crispy, an additional two to three minutes. Drain on paper towels and sprinkle with salt.
In a small bowl, stir together the garlic and mayonnaise. Serve as a dipping sauce for the tostones.
