Diets 2 small sweet potatoes
1 egg
2 tablespoons oil, such as Tonnelli Avocado Oil

12 ounces Beleaves Broccoli
12 ounces Beleaves Cauliflower
2 small onions
2 eggs
4 tablespoons whole wheat matzo meal (see note)
6 tablespoons oil, such as Tonnelli Avocado Oil
1 and 1/2 teaspoons salt
pinch of black pepper
Defrost the broccoli and cauliflower florets. Preheat the oven to 400 degrees Fahrenheit. Chop two small onions into chunks. Add two tablespoons oil and bake covered for 30 minutes or until sauteed.
Peel the sweet potatoes and blend using the “S” blade. Add the rest of the sweet potato layer ingredients and mix well by hand. Pour into a five-pound pan and bake for 45 minutes.
Add the cauliflower and one sauteed onion to the food processor (“s” blade) and blend very well, for three to five minutes. Add the blended cauliflower to a bowl with one egg, two tablespoons whole wheat matzo meal, three tablespoons oil, 3/4 teaspoon salt, and a pinch of salt. Mix well by hand and pour onto the baked sweet potato layer. Bake 45 minutes.
Repeat the directions of the cauliflower layer, using the remaining ingredients. Pour the broccoli mixture onto the baked cauliflower layer and bake 45 minutes to one hour.
