This is a winning vegetable kugel that uses basic ingredients and fried onions for lots of flavor. Lighter than potato kugel but no less delicious!
3 large onions
3 large carrots
1/4 cup oil
3 large zucchini
3 eggs
1 teaspoon salt or to taste
1/8 teaspoon Pereg Black Pepper or to taste
Preheat oven to 350 degrees Fahrenheit.
Grate onions and carrots. Sauté in 1⁄4 cup oil in a large skillet until lightly browned.
Grate zucchini into large mixing bowl and let sit for 20 minutes. Squeeze out excess water.
Add fried onions and carrots to zucchini. Add eggs, salt, and pepper.
Mix and bake, uncovered, in two 9-inch round pans, for 45 minutes.

Any suggestions on what size single dish to put this in and how long to bake in a single dish?
It may fit in a 15×10 pyrex and i would cook it the same amount of time.

supper simple to make and tastes great!
