Diets This is a great alternative to potato kugel. This vegetable kugel has some carrots, zucchini, a few potatoes, an onion, olive oil, a bit of flour, eggs, salt, and pepper. You will keep coming back for more!
4 big carrots
1 small onion
3 potatoes
3 zucchini (not peeled)
4 eggs
1/4 cup flour
3/4 cup oil
3/4 tablespoon salt
1/4 teaspoon black pepper
Preheat the oven to 350 degrees Fahrenheit.
Mix the eggs, oil, flour, salt, and black pepper in a bowl.
Add a few of the vegetables at a time to a food processor and process them using the medium shredding blade.
Once the vegetables are shredded, add them to the bowl with the egg mixture and mix really well.
Pour into a lightly greased nine- x 13-inch baking dish and bake for one hour.

Excellent just recommend to add more salt 1.5-2 tsp and more for those who use a lot of salt.
