Tu Bishvat Cookies

Every year I make some elaborate dish using fruits for tu bishvat. One year it was olive infused chicken. One year I made a fruit infused meat. My kids were not happy lol This year I decided to make them something I know they would like it and eat!

Ingredients

Main ingredients

  • 3/4 cup oil

  • 1 cup brown sugar

  • 1/4 cup white sugar

  • 1 teaspoon Gefen Vanilla

  • 2 eggs

  • 2 cups Mishpacha Flour

  • 1/2 teaspoon Gefen Baking Soda

  • 1/2 teaspoon salt

  • An assortment of chopped up fruit and nuts; I used raisins, almonds, cashews, dried apricot chopped, dried mango chopped

Directions

Prepare the Cookies

1.

In a mixing bowl. Mix the first five ingredients together and add the the rest.

2.

Place spoonfuls on a Gefen Parchment lined cookie sheet and bake 350°F for 12 minutes.

What quanity of chopped fruit and nuts is added to the dough?

I would say 1-2 cups would work.
