My favorite thing when it comes to cooking and creating new recipes is converting haters in to lovers (or at least “don’t mind”-ers.) This recipe has changed the minds of many tuna haters who at first wouldn’t touch these patties!
1 packet matza ball mix
2 eggs
2 tablespoons oil + 1/2 cup oil
12 oz canned tuna, drained
15 oz canned peas and carrots, drained
15 oz canned sliced potatoes, drained
1 Tablespoon fresh parsley, chopped
1/2 teaspoon fresh dill, chopped
2 teaspoons salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
Whisk the eggs and two tablespoons oil. Add the matza ball packet and mix until well incorporated.
Add the tuna and mash well. Pour in the sliced potatoes and break up by hand to create small chunks.
Add the peas and carrots, parsley, dill, salt, black pepper and garlic powder. Use your hand to combine it all.
Heat 1/2 cup oil over medium heat. Grease your hands and form patties. Fry each patty for 3-5 minutes a side. Serve fresh or freeze for later.
