Did you know that rice can be cooked in the oven in a small baking sheet? This is a lifesaver, because I am always overcooking my stovetop rice; who has time to babysit a boiling pot or schlep out the rice cooker? Turkey fried rice is my healthier alternative to the sloppy joes we regularly eat, and it’s super fast and easy to make it on the stovetop – but this time, if I was already making the rice in the oven, why not just throw everything on the same baking sheet?
1 pound ground turkey
1 small onion, diced
1 box of mixed frozen corn, peas, and carrots
2 teaspoons Gefen Garlic Powder
1 teaspoon Gefen Onion Powder
salt, to taste
pepper, to taste
1/2 cup Haddar Honey Mustard
1 cup rice
1 tablespoon Tuscanini Olive Oil
generous pinch of salt
2 and 1/2 cups water
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with Gefen Parchment Paper. Grease half the baking sheet with oil.
In a bowl, mix together all the ingredients for the ground turkey stir-fry till fully incorporated.
Using your hands, mash the mixture into the greased half of the baking sheet, spreading it out as much as possible.
In a disposable aluminum nine- x 13-inch pan, pour in the rice, oil, salt, and water.
Cover everything very loosely with foil. Bake for about 35 to 40 minutes.
Check on your rice after about 25 minutes. Mix and add a bit more water to cover if dried out.
To serve, break up the meat into small pieces and serve over rice.
