Diets 2 cups flour
1 cup sugar, divided
1 and 1/2 teaspoons baking powder
1 cup brown sugar
1 teaspoon salt
5 to 6 apples, peeled and sliced thinly
2 eggs
1/2 cup oil, divided
oil spray
3/4 cup butter
2 tablespoons cinnamon, divided
1/2 lemon, juiced, divided
1 teaspoon vanilla
Preheat oven to 350 degrees Fahrenheit. Grease a springform or regular pan.
In a medium-size pan over medium heat, add 1/4 cup oil and apples. Let them cook until the apples are soft with crispy edges, then add half the cinnamon and lemon on top plus two tablespoons sugar. Mix and let cook until crispy. Once all the sides of the apples are nice and cooked through, remove from heat and layer in your greased pan in one layer. Set aside. If you have extra apples, chop them up finely and add them to your cake mixture when adding the eggs.
In a stand mixer, cream together the butter and sugars until light and fluffy, then add the eggs, 1/4 cup oil, leftover chopped apples, and vanilla. Mix again till incorporated. Once incorporated add your flour, baking powder, salt and the rest of the cinnamon. Mix one more time until fully incorporated. Then pour the batter into the pan on top of the apples.
Bake for 30 to 45 minutes or until you a toothpick or knife poked into the middle of the cake and it comes out clean. Let cool completely.
