Vegetable Kugel with Ground Meat

Here's one "kugel" that's full of protein instead of starch. This meatloaf incorporates potatoes, carrots, and zucchini.

Bake

  1. Mix all ingredients well and pour into a greased 8- x 10-inch baking pan. Bake at 375 degrees Fahrenheit for one and a half hours.

Variation:

This mixture can also be fried or baked as patties.
