Bubby’s yummy soup.
1 cup split peas
1 cup great northern beans
1/2 cup barley
3 loose carrots, shredded or diced
2 celery, diced
squash, with peel, washed and diced
1 tbsp salt
2 tbsp chicken soup mix
1 medium onion
3 tbsp flour
Combine split peas, beans and barley in a bowl at water and let soak for at least 3 hours, changing the water from time to time.
Fill up an 8-quart pot 3/4 with water and bring to a boil.
Rinse the peas, beans and barley and then add to the boiling water.
Let cook for 1 hour, then add the diced vegetables and seasonings.
Let cook for another 2 hours.
In separate pan, make a roux. Sauté onion until golden brown, then add flour and mix fast till it becomes brown. (Bubby called this a רייסטל)
Put a lukshen strainer into veg. soup pot and pour the רייסטל into the strainer so the sauté onion mixture combines with soup. Mix it in the strainer then sift out the onion. This thickens the soup.
