Diets This is really good and perfect for people who don’t eat dairy. You can serve it as a side dish, and it’s a great way to get those veggies in your diet.
2 onions, chopped
3 carrots, thinly grated
1 cup mushrooms, chopped
1 celery stalk. chopped
2 red peppers, chopped
1 package of chopped spinach
4 eggs
1/4 cup matzah meal or potato starch
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried basil
Sauté chopped onions.
Add rest of veggies (besides spinach) and sauté. Cover until all veggies soften.
Add to large bowl and mix with remaining ingredients.
Pour into greased Pyrex and bake at 350 degrees Fahrenheit until toothpick comes out clean.
