This by far is the funnest dinner I ever made! My family’s eyes opened wide and they dove right in! You mean we can have a snack bag for dinner!? Add in a good wholesome burger with vegetables; mama’s happy, the kids are happy everyone is happy!
*It’s less about the actual recipe and more about having fun and adding your favorites to the bag!
8 snack bags of your choice (see note)
approximately 3 cups Beleaves lettuce, chopped
2 tomatoes, chopped
1/2 red onion, diced
2 jalapeños chopped (optional)
1 cup shredded cheese
taco toppings (see directions)
Bake veggie burgers according to package directions. Cut up into large pieces.
Open the snack bags and lightly crush the chips. Add the lettuce, onions, jalapeños, shredded cheese, and lastly the burgers.
Drizzle with your favorite toppings. You can totally go nuts and add any fun topping: chopped avocado, pickles, hot peppers, feta cheese, black beans, corn — really anything.
