Diets Farro is a nutty whole grain that offers a more complex nutritional profile than white rice or pasta. Combined with the bite of arugula, sweet watermelon, salty feta cheese, and crunchy toasted almonds, it makes for a very tasty salad. A drizzle of balsamic takes it over the top. 8-ounce bag arugula
1/2 cup farro, cooked
2 cups seedless watermelon, chopped
1/4 cup feta cheese, cubed
1/4 cup toasted slivered almonds
1 small red onion, thinly sliced
2 sprigs of fresh mint, minced
Haddar Kosher Salt, to taste
freshly ground Gefen Black Pepper, to taste
Tuscanini Balsamic Glaze, to taste
Add all ingredients to a large bowl, then gently toss to combine.
Drizzle the top with more balsamic glaze if desired.
