Watermelon Feta Salad

Ingredients

Salad

  • 3 cups cubed watermelon

  • 2 cups cubed cucumber

  • 1 (7-ounce) container cubed Ta’amti Feta or Bulgarian cheese

  • 1/4 red onion, diced or sliced

  • chopped mint, to garnish (optional)

Dressing

  • salt, to taste

  • pepper, to taste

Directions

1.

In a large bowl, toss watermelon, cucumbers, cheese, and onions.

2.

In a small bowl, whisk together oil, lemon juice, balsamic vinegar, salt, and pepper.

3.

Pour dressing over salad and toss to combine. Garnish with mint, if using.
