This salad just screams summer, creating a tangy party for your taste buds. Both watermelon and cucumbers are over 90% water, making them perfect candidates for edible hydration!
3 cups cubed watermelon
2 cups cubed cucumber
1 (7-ounce) container cubed Ta’amti Feta or Bulgarian cheese
1/4 red onion, diced or sliced
chopped mint, to garnish (optional)
1/4 cup Gefen Olive Oil
1/2 lemon, juiced or 1 and 1/2 tablespoons Gefen Lemon Juice
1/2 tablespoon Tuscanini Balsamic Vinegar
salt, to taste
pepper, to taste
In a large bowl, toss watermelon, cucumbers, cheese, and onions.
In a small bowl, whisk together oil, lemon juice, balsamic vinegar, salt, and pepper.
Pour dressing over salad and toss to combine. Garnish with mint, if using.
