Minted Watermelon Feta Tomato Salad

Ingredients

Salad

  • 8 cups watermelon, cut into 1/2-inch cubes

  • 3/4 cup Taamti Feta Cheese

  • 2 cups cherry tomatoes, halved

  • 1 cup fresh mint, packed, cleaned and sliced very thin

  • 6 scallions, washed and sliced thin

Dressing

  • 1/4 cup fresh lemon or lime juice

  • 1/4 cup Gefen Olive Oil

  • salt, to taste (you might need none at all)

  • pepper, to taste

  • pinch of red pepper flakes

Directions

1.

Place all salad ingredients in a platter. Whisk the dressing ingredients in a little bowl and pour over the salad. Mix very gently so as not to extract moisture.
