White Chocolate and Blueberry Bundt Cake

Ingredients

Batter

  • 3 large eggs

  • 1 cup oil

  • 1 cup sugar

  • 2 tablespoons vanilla sugar

  • 2 and 1/3 cups Glicks Flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 2/3 cup Gefen Almond Milk

  • 2 tablespoons lemon juice

  • 1 and 1/2 cups frozen or fresh blueberries

  • 1 cup white chocolate chips

Streusel

Glaze

  • 1 tablespoon oil

Directions

1.

Preheat the oven to 350 degrees Fahrenheit.

Prepare the streusel: Place ingredients into a resealable bag and mix until it becomes a crumby consistency. Set aside.

3.

In the bowl of an electric mixer, combine eggs, oil, and sugars until light and fluffy, about five minutes.

4.

Add the flour, baking powder, and baking soda, and mix until just combined.

5.

Then add the milk and lemon juice and mix until fully combined.

6.

Fold in the blueberries and white chocolate chips.

7.

Line the bottom of a Bundt pan and spray the sides. Pour the batter into the prepared pan and sprinkle the streusel on top.

8.

Bake for 50–60 minutes until an inserted toothpick comes out clean.

9.

Allow to cool.

10.

Meanwhile, prepare the glaze: Combine all the ingredients in a small bowl and mix until smooth.

11.

When cool, remove from pan and drizzle the glaze on top.

hi please answer about the tube pan and the bundt pan and the streusel thanks

It looks like they use a tube pan and then serve it with out flipping it over – with the narrower side down. They may just be calling it a Bundt pan/ cake as many do even if it’s not. U probably can use a Bundt pan grease it well and sprinkle the streusel first so it will be upright when flipped – I do that with other cakes and I use floured baking spray and it works fine. Or u could put the streusel at the bottom and u just won’t see it. Or just do what they did and ignore the fact that it says Bundt ;). Also u have to mark your comment as a question in order for them or answer it.

you call this a bundt pan but the this picture is a tube pan also you say to put the streusel on top of the bundt pan but when cool the bundt pan is turned upside down and the streusal will be on the bottom of the cake thats why it should be made in a tube pan not a bundt pan

hi oould you tell me how you line the bottom of a bundt pan with all the crevices and bumps?

I would suggest greasing it VERY thoroughly and dust it with flour or sugar..also waiting until the cake is completely cool before taking it out of the pan makes a huge difference!
