Diets If you’re looking for something on the healthier side but still comforting, this dish is for you! Persimmons add another dimension to this bake, but if you can’t find them that’s okay. Just omit them.
2 Granny Smith apples, cored and sliced
2 pears, cored and sliced
3 small firm Fuyu persimmons, sliced
2 tablespoons Heaven & Earth Coconut Oil or margarine
2 tablespoons Heaven & Earth Coconut Sugar or brown sugar
1/2 teaspoon Gefen Ground Cinnamon
1/4 teaspoon allspice (optional)
2 tablespoons hot water
1/2 cup fresh or frozen cranberries
Preheat oven to 375 degrees Fahrenheit.
Cut up the fruit. Place the coconut oil or margarine in an oven-safe dish and put into the oven for two to three minutes to melt. Remove dish from oven and add fruit, sugar, spices and hot water. Toss to coat.
Bake covered for 35 minutes. Add the cranberries and bake for another 10 minutes.
Serve warm with pareve ice cream, whipped cream, or as-is.
