Diets This fresh crisp salad has a little bit of everything: savory crunch from the red onions, a sweetness from the pomegranate seeds, and that fresh tart bite from the green apple. Top with this fabulous dressing and this salad will disappear quickly at you Shabbos or Yom Tov meal.
24 ounces fresh baby spinach or baby kale
1 cup pomegranate seeds
1 green apple, thinly-sliced with the peel
1 small red onion, thinly-sliced
3 tablespoons Tuscanini Raspberry Fruit Spread or other raspberry jam
1 tablespoon Haddar Dijon Mustard
1/4 cup vinegar
1/4 cup Gefen Olive Oil
kosher salt
freshly-ground Gefen Black Pepper
Place all the dressing ingredients in a container with a tight-fitting cover.
Shake well until combined.
Place all the salad ingredients in a large bowl.
Drizzle with dressing and serve immediately.
