A bag of coleslaw mix is my secret weapon when it comes to weeknight salads. It’s pretty fridge-stable and works well with mostly any toppings. My kids love the sweet crunchy toppings- apples, cucumbers and pomegranate seeds are always a hit!
1 bag coleslaw mix
1 bag shredded carrots
2 Persian cucumbers
pomegranate seeds
dried apricots, chopped (sugar-free, if desired)
watermelon radish, thinly sliced
apple, sliced into matchsticks
pine nuts
1 tablespoon miso paste
2-3 tablespoons Galilee’s Delicacy Silan Date Syrup
2 tablespoons Dijon mustard
1/3 cup Tuscanini Apple Cider Vinegar
pinch of black pepper
1/3 cup extra virgin olive oil
Add all ingredients except for oil to a blender. Blend to combine.
Slowly stream in oil and blend until emulsified.
Combine all salad ingredients in a large bowl.
Pour dressing over and toss to coat.
