Submitted by Chani Garellek This is a dinner staple in our home! It’s moist and yummy and gives shnitzel a whole new life.
1 pack chicken cutlets, cut in half
1 cup soy milk
1 cup flour
2 eggs
Jason bread crumbs
5 potatoes
1 large onion
1/2 stick of margarine
salt and pepper to taste
1 pack of frozen broccoli
oil for frying
1 carrot, peeled (optional)
Preheat frying pan and oil.
Cut chicken breast in half.
In a separate bowl, mix eggs, flour and soy milk until you have a batter.
Dip chicken in batter and then in bread crumbs.
When oil is hot, place your carrot on the side of the pan. Add chicken and fry till golden brown. Place on cooling rack.
Repeat till all your chicken is fried.
Peel and boil your potatoes until they are soft. Drain the water, then add half stick of margarine and salt and pepper.
Cut and fry an onion until it’s golden brown. Mix into mashed potatoes.
Steam broccoli to your family’s preference ( mine likes it crunchy) and add salt.
