This is a really easy, yummy and refreshing salad that can be thrown together really quickly and served for a family Chol Hamoed get-together. In a pinch you can use leftover grilled chicken or even store-bought chicken nuggets. Simply cut the chicken into small pieces, add to the salad, toss all together, serve over some matzo crackers, and voila! You have beautiful Hors D’Oeurves!

Manischewitz Matzo (broken into pieces) or Matzo Crackers
