Diets Comfort food at its best. My Grandmother used to make some sort of version of this when I was younger. I always loved it. It’s a delicious, warm dish that conjures up so many incredible memories!
1 (16-ounce) bag Beleaves Sliced Zucchini, defrosted and drained
1 (8-ounce) box white mushrooms, sliced
1 medium onion, sliced
1 teaspoon Gefen Salt
1/2 teaspoon black pepper
2 teaspoons oil, such as Gefen Cottonseed Oil
Heat the oil in a frying pan on medium/high heat, add the onions, and sauté for about five minutes until they start to get shiny. Add the mushrooms and zucchini and gently stir.
Let it cook for about 15 minutes or until the zucchini is cooked through. You don’t want it to cook too long or it will get mushy.
To serve, reheat covered until heated through.
