Zucchini Pea Soup

Ingredients

Zucchini Pea soup

  • 1.5 cups frozen peas

  • 7 cups of chicken stock or water

  • 1 heaping TBSP of salt

  • 1/2 tsp pepper

  • 3 TBSP oil

  • 1/2 Tbsp dill

  • 2 large onions, diced

  • 1/2 TBSP parsley

  • 2 cloves garlic, minced

  • 1/2 tsp lemon rind

  • 6 dark green zucchinis, cut into large chunks

  • 1 red potato, cubed

Directions

Prepare the Zucchini Pea Soup

1.

Heat a large pot with oil, add onions and sauté until golden, then add garlic and stir for about a minute.

Add the zucchinis and let cook for 5-7 minutes, mixing every few minutes.

3.

Add water and seasonings. Let water come to a boil and then add the potato.

4.

Let simmer for 1 hour.

5.

Add peas and let cook for another 5 minutes.

6.

Take off the fire and blend soup.

7.

Adjust seasoning to taste.

8.

Serve hot:)
