Ingredients

Zucchini Tuna Patties

  • 1 medium zucchini, finely grated

  • 1 small onion, finely chopped

  • 4 eggs

  • 1/2 cup breadcrumbs or corn flakes crumbs

  • 2 tbsp lite mayo

  • salt and pepper to taste

  • 24 oz canned tuna, drained

Directions

Prepare the Zucchini Tuna Patties

1.

Prepare 2 baking sheets lined with parchment paper. Spray with pam.

Squeeze excess liquid out of grated zucchini and tuna.

3.

Mix all ingredients together.

Form into patties, approximately ΒΌ cup of mixture each.

5.

Arrange patties on baking sheet. They can be very close together. Spray tops with Pam.

6.

Bake at 400 for 15 minutes. Flip patties and bake additional 10-15 minutes.

7.

(Alternatively, flatten evenly into a 9×13 or 2 loaf pans and bake 35-50 minutes until fairly firm.)
