Veal Scallopini with Blood Orange Caper Vinaigrette

Everyone loves schnitzel! Why not try it without the bread! This take on veal scallopini uses just egg batter instead of breading, making a great gluten-free alternative to schnitzel!

 Vinaigrette
 juice of 1 blood orange
 1/2 clove garlic, very finely diced
 1/4 cup capers, rinsed and roughly chopped
 2 sprigs mint, chiffonade
 2 tablespoons reserved frying oil
 2 tablespoons Zeta Lemon Olive Oil
